Korean BBQ Meatballs with Spicy Mayo Dip

Meatball Ingredients:

  • 1 lb ground beef (or substitute with pork or a mix)

  • ¼ cup breadcrumbs (or panko for crispier texture)

  • ¼ cup grated Parmesan cheese

  • 1 egg

  • ¼ cup finely chopped onion

  • 2 cloves garlic, minced

  • ¼ cup chopped fresh parsley

  • ½ tsp dried oregano

  • ¼ tsp salt

  • ⅛ tsp black pepper

Korean BBQ Glaze:

  • ¼ cup gochujang (Korean red pepper paste)

  • 2 tbsp soy sauce

  • 2 tbsp honey (or brown sugar)

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tbsp sesame oil

  • 1 tsp grated ginger

  • 1 clove garlic, minced

  • 1 tbsp water (if needed for thinning)

Spicy Mayo Dip:

  • ½ cup mayonnaise

  • 1-2 tbsp sriracha (adjust to taste)

  • 1 tsp rice vinegar

  • ½ tsp sesame oil

  • 1 tsp honey

  • Optional garnish: Toasted sesame seeds, sliced green onions


Instructions:

1. Prepare the Meatballs:

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, onion, garlic, parsley, oregano, salt, and pepper. Mix gently (don’t overwork the meat).

  • Roll into 1-inch meatballs (~20-24 pieces) and place on the baking sheet.

  • Bake for 15-18 minutes until cooked through.

2. Make the Korean BBQ Glaze:

  • While meatballs bake, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic in a small saucepan.

  • Simmer on low heat for 3-4 minutes until slightly thickened. Add water if too thick.

3. Coat the Meatballs:

  • Toss baked meatballs in the warm glaze until fully coated.

4. Make the Spicy Mayo Dip:

  • Mix mayonnaise, sriracha, rice vinegar, sesame oil, and honey in a small bowl.

5. Serve:

  • Arrange glazed meatballs on a plate, drizzle with extra glaze or spicy mayo, and garnish with sesame seeds & green onions.

  • Serve with the spicy mayo dip on the side.


Tips:

  • For extra crispiness, pan-fry meatballs in oil before glazing.

  • Make ahead: Prepare meatballs and glaze separately, then reheat and combine before serving.

  • Alternative cooking: Cook in an air fryer at 375°F (190°C) for 10-12 minutes.
