Layered Zucchini Ricotta Melts with Marinara 🍆🧀🔥

Low-carb, veggie-packed, and bursting with Italian flavors—this dish is like a deconstructed lasagna without the guilt!

Ingredients (Serves 4)

Zucchini Layers:

  • 4 medium zucchini (~2 lbs), sliced lengthwise into ¼-inch strips

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp salt

  • ¼ tsp black pepper

Cheesy Filling:

  • 1½ cups ricotta cheese (whole milk for creaminess)

  • 1 egg (helps bind)

  • ½ cup grated Parmesan

  • 1 tsp Italian seasoning

  • ¼ tsp red pepper flakes (optional for heat)

Assembly:

  • 1½ cups marinara sauce (sugar-free for keto)

  • 1½ cups shredded mozzarella

  • Fresh basil or parsley (for garnish)

Instructions

1. Prep Zucchini:

  • Preheat oven to 400°F (200°C).

  • Toss zucchini strips with olive oil, garlic powder, oregano, salt, and pepper.

  • Arrange on baking sheets in a single layer. Roast for 15–20 mins until tender but not mushy. Pat dry with paper towels to remove excess moisture.

2. Make Ricotta Filling:

  • Mix ricotta, egg, Parmesan, Italian seasoning, and red pepper flakes until smooth.

3. Layer & Bake:

  • In a 9×9-inch baking dish, spread ½ cup marinara.

  • Add a layer of zucchini, then ½ ricotta mixture, and ½ mozzarella. Repeat layers, ending with mozzarella on top.

  • Bake for 25–30 mins until bubbly and golden. Broil 2 mins for extra crispiness!

4. Serve:

  • Let rest 10 mins (or it’ll be lava-hot!). Garnish with fresh herbs.

Pro Tips:

✔ Salt zucchini before roasting to draw out moisture and prevent sogginess.
✔ No-cook hack: Use store-bought pre-sliced zucchini or a mandoline for even strips.
✔ Make ahead: Assemble (unbaked) and refrigerate overnight—great for meal prep!

Why It’s a Winner:

🌿 Low-carb, gluten-free, and veggie-loaded
🧀 Creamy ricotta + stretchy mozzarella = comfort food magic
🔥 Crispy edges from broiling (the best part!)

Pair with:

  • A crisp green salad 🥗

  • Garlicky keto bread 🍞

Variations:

  • Meat lovers: Add browned Italian sausage between layers.

  • Eggplant swap: Use roasted eggplant instead of zucchini.

  • Pesto twist: Swirl basil pesto into the ricotta.

Could this replace your lasagna cravings? Let me know if you want a spicier or meatier version! 😋
