Lazy Bacon-Potato Crunch

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 1 package (about 12 oz) cooked bacon, crumbled or chopped
  • 1 cup shredded cheddar cheese
  • 1 cup French fried onions (for crunch)

Instructions:

  1. Cook the potatoes:

    • Boil the diced potatoes in a pot of salted water until tender, about 10-12 minutes. Drain the water once the potatoes are cooked and tender.
  2. Assemble the dish:

    • In a large mixing bowl, combine the cooked and drained potatoes, crumbled bacon, and shredded cheddar cheese. Stir everything together until the ingredients are evenly mixed.
  3. Add the French fried onions:

    • Gently fold in the French fried onions, reserving a handful to sprinkle on top for extra crunch.
  4. Serve:

    • Serve the mixture immediately as a warm, cheesy potato dish or bake it in a 350°F (175°C) oven for about 10 minutes for an extra crispy topping.
