Leek and Cheese Biscuits

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1/2 cup (50g) finely chopped leeks (white and light green parts only)
  • 3/4 cup (180ml) buttermilk (or regular milk with 1 tbsp lemon juice)
  • Optional: 1 tbsp melted butter (for brushing)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare the dry ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Cut in the butter:
    • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add the leeks and cheese:
    • Stir in the shredded cheddar cheese and chopped leeks until evenly distributed.
  5. Add the buttermilk:
    • Pour in the buttermilk and stir until the dough just comes together. Be careful not to overmix.
  6. Shape the biscuits:
    • Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle.
    • Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet.
  7. Bake:
    • Bake for 12-15 minutes, or until the biscuits are golden brown on top.
  8. Brush with butter (optional):
    • If desired, brush the tops of the warm biscuits with melted butter for extra flavor.
  9. Serve:
    • Enjoy warm or at room temperature.

Tips

  • Add-ins: Include cooked bacon, diced ham, or herbs like thyme or rosemary for extra flavor.
  • Make ahead: Prepare the dough, shape the biscuits, and freeze them on a baking sheet. Once frozen, transfer to a zip-top bag and bake as needed, adding a few extra minutes to the baking time.
  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Reheat before serving.
