½ tsp salt
-
¼ tsp black pepper
-
1 tbsp flour (or cornstarch for gluten-free)
-
½ cup vegetable broth
-
¼ cup heavy cream (or coconut cream for dairy-free)
-
1 tsp Dijon mustard (optional)
-
½ cup grated Gruyère or cheddar cheese (optional)
For the Pastry

1 sheet puff pastry (or shortcrust pastry), thawed

1 egg (for egg wash)
Instructions
1. Cook the Filling
-
In a large skillet, melt butter over medium heat. Add leeks and sauté for 5 minutes until soft.
-
Add mushrooms, garlic, thyme, salt, and pepper. Cook 8-10 minutes until mushrooms release moisture and brown.
-
Sprinkle flour over the mixture, stir well, then pour in broth and cream. Simmer 2-3 minutes until thickened.
-
Stir in mustard and cheese (if using). Remove from heat and cool slightly.
2. Assemble the Pies
-
Preheat oven to 400°F (200°C).
-
Roll out puff pastry and cut into 4-6 squares (or circles for handheld pies).
-
Spoon filling onto one half of each pastry piece, leaving a border.
-
Fold pastry over, seal edges with a fork, and brush with beaten egg for a golden finish.
-
Cut small slits on top for steam to escape.
3. Bake
-
Place pies on a lined baking sheet and bake 20-25 minutes until golden and puffed.
