Leek & Mushroom Pies 🍄🥧

These savory, buttery leek and mushroom pies are the ultimate comfort food—flaky pastry filled with a rich, creamy mushroom and leek filling. Perfect as a vegetarian main or a cozy side dish!


Ingredients

For the Filling

  • 2 tbsp butter (or olive oil)

  • 2 large leeks, white & light green parts only, thinly sliced

  • 10 oz (300g) mushrooms (cremini, button, or wild), sliced

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp flour (or cornstarch for gluten-free)

  • ½ cup vegetable broth

  • ¼ cup heavy cream (or coconut cream for dairy-free)

  • 1 tsp Dijon mustard (optional)

  • ½ cup grated Gruyère or cheddar cheese (optional)

For the Pastry

  • 1 sheet puff pastry (or shortcrust pastry), thawed

  • 1 egg (for egg wash)


Instructions

1. Cook the Filling

  • In a large skillet, melt butter over medium heat. Add leeks and sauté for 5 minutes until soft.

  • Add mushrooms, garlic, thyme, salt, and pepper. Cook 8-10 minutes until mushrooms release moisture and brown.

  • Sprinkle flour over the mixture, stir well, then pour in broth and cream. Simmer 2-3 minutes until thickened.

  • Stir in mustard and cheese (if using). Remove from heat and cool slightly.

2. Assemble the Pies

  • Preheat oven to 400°F (200°C).

  • Roll out puff pastry and cut into 4-6 squares (or circles for handheld pies).

  • Spoon filling onto one half of each pastry piece, leaving a border.

  • Fold pastry over, seal edges with a fork, and brush with beaten egg for a golden finish.

  • Cut small slits on top for steam to escape.

3. Bake

  • Place pies on a lined baking sheet and bake 20-25 minutes until golden and puffed.


Serving Suggestions

  • With gravy for extra richness.

  • Side salad for freshness.

  • Mashed potatoes for ultimate comfort.
