Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 garlic cloves, minced
  • 2 lemons (juice and zest)
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1 teaspoon paprika
  • Salt and pepper, to taste

For the Potatoes:

  • 1.5 pounds baby potatoes (halved or quartered if large)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper, to taste

For the Green Beans:

  • 1 pound fresh green beans (trimmed)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional: 1 tablespoon lemon juice for extra flavor

Instructions

1. Marinate the Chicken

  1. In a large bowl, combine garlic, lemon juice, lemon zest, olive oil, oregano, paprika, salt, and pepper.
  2. Add the chicken breasts and coat evenly. Cover and let marinate for at least 30 minutes (or overnight for deeper flavor).

2. Prepare the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread them out on a large baking sheet in a single layer.

3. Roast the Potatoes

  1. Roast the potatoes in the preheated oven for 20 minutes.
  2. After 20 minutes, move the potatoes to one side of the baking sheet.

4. Add the Chicken and Green Beans

  1. Place the marinated chicken on the baking sheet next to the potatoes.
  2. Toss the green beans with olive oil, garlic powder, salt, and pepper. Arrange them on the other side of the baking sheet.
  3. Roast everything together for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown.

5. Broil for Extra Color (Optional)

  1. Turn the oven to broil for 2-3 minutes to add a bit of color to the chicken and vegetables. Watch carefully to avoid burning.

6. Serve

  • Plate the chicken with roasted potatoes and green beans. Drizzle with additional lemon juice if desired.
  • Garnish with fresh parsley or lemon wedges for a fresh finish.
