Lemon Blueberry Cheesecake Cake Recipe

Ingredients

For the Lemon Cake:

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 3 large eggs
  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon baking powder
  • ½ teaspoon salt

For the Blueberry Cheesecake Layer:

  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed)

For the Lemon Frosting:

  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1-2 tablespoons milk (if needed)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Make the Lemon Cake:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs, buttermilk, lemon zest, and lemon juice, mixing until combined.
    • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  3. Bake the Cake:
    • Divide the lemon cake batter evenly between the prepared pans.
    • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Blueberry Cheesecake Layer:
    • In a bowl, beat the softened cream cheese and sugar until smooth.
    • Add the egg and vanilla extract, mixing until well combined. Gently fold in the blueberries.
    • Spread the cheesecake mixture into a greased 9-inch round cake pan (use the same pan as for the cake, if needed).
  5. Bake the Cheesecake Layer:
    • Bake the cheesecake layer at 350°F (175°C) for 25-30 minutes or until set. Let it cool completely.
  6. Make the Lemon Frosting:
    • In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, lemon juice, and lemon zest, mixing until smooth. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.
  7. Assemble the Cake:
    • Once everything is completely cool, place one lemon cake layer on a serving plate. Top with the cooled blueberry cheesecake layer, followed by the second lemon cake layer.
    • Frost the top and sides of the cake with the lemon frosting.
  8. Serve:
    • Garnish with fresh blueberries and lemon slices, if desired. Slice and enjoy your delicious lemon blueberry cheesecake cake!
