Ingredients (Serves 4):

  • 4 salmon fillets 🐟
  • 1 lb baby potatoes, halved 🥔
  • 2 cups broccoli florets 🥦
  • 3 tbsp butter 🧈
  • 2 tbsp olive oil 🛢️
  • 2 garlic cloves, minced 🧄
  • Zest and juice of 1 lemon 🍋
  • Salt and black pepper, to taste 🧂
  • Fresh parsley, for garnish 🌿

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:

    • In a large bowl, toss the baby potatoes with 1 tablespoon of olive oil, salt, and pepper.
    • Spread the potatoes out on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until golden and crispy on the outside and tender on the inside. Stir halfway through cooking for even crispiness.
  3. Prepare the Broccoli:

    • While the potatoes are roasting, steam or blanch the broccoli florets in a pot of boiling water for about 2-3 minutes until bright green and tender, but still crisp. Drain and set aside.
  4. Cook the Salmon:

    • While the potatoes are finishing, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper on both sides.
    • Place the salmon fillets in the hot skillet and cook for about 3-4 minutes per side, or until the salmon is cooked through and easily flakes with a fork. Remove the salmon from the skillet and set aside.
  5. Make the Lemon Butter Sauce:

    • In the same skillet, reduce the heat to medium-low and melt the butter. Add the minced garlic and cook for about 1 minute until fragrant.
    • Add the lemon zest and lemon juice to the skillet and stir to combine. Let it simmer for a minute to allow the flavors to meld.
  6. Combine the Dish:

    • Once the potatoes are done, toss them with the steamed broccoli. Drizzle the lemon butter sauce over the potatoes and broccoli.
    • Serve the salmon fillets on plates, and top with the crispy potatoes and broccoli. Spoon some extra lemon butter sauce over the salmon and garnish with fresh parsley.
