Lemon Cheesecake Mousse Recipe

Ingredients:

  • For the Mousse:
    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1/2 cup sour cream
    • 1/2 cup heavy whipping cream
    • Zest of 1 lemon
    • 1/4 cup fresh lemon juice
    • 1 teaspoon vanilla extract
  • For the Topping (Optional):
    • Whipped cream
    • Lemon zest
    • Fresh berries (like blueberries or raspberries)

Instructions:

1. Prepare the Cream Cheese Mixture:

  • In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add the powdered sugar, sour cream, lemon zest, lemon juice, and vanilla extract. Mix until well combined and smooth.

2. Whip the Cream:

  • In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overbeat.

3. Fold the Mixtures:

  • Gently fold the whipped cream into the cream cheese mixture until no streaks remain. Be careful to maintain the light, airy texture.

4. Chill:

  • Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.

5. Serve:

  • Just before serving, top with whipped cream, a sprinkle of lemon zest, and fresh berries if desired.
