Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 325°F (165°C). Grease and flour a 10-inch bundt pan or 9×5-inch loaf pan.
  2. Prepare the Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the Butter, Cream Cheese, and Sugar:

    • In a large mixing bowl, beat the unsalted butter and cream cheese together until smooth and creamy (about 3-4 minutes).
    • Gradually add the granulated sugar and continue beating until light and fluffy.
  4. Add the Eggs:

    • Add the eggs, one at a time, beating well after each addition. This helps to incorporate the eggs evenly into the batter.
  5. Add the Lemon Juice:

    • Stir in the lemon juice, mixing until the batter is smooth and well combined.
  6. Combine the Wet and Dry Ingredients:

  7. Bake:

    • Bake in the preheated oven for 60-70 minutes (for a bundt pan) or 50-60 minutes (for a loaf pan), or until a toothpick inserted into the center of the cake comes out clean.
    • If the top begins to brown too quickly, loosely cover with aluminum foil for the remainder of the baking time.
  8. Cool:

    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Optional Glaze: For an extra touch of lemony sweetness, drizzle a lemon glaze over the cake. Combine 1 cup powdered sugar with 1 tablespoon lemon juice and stir until smooth, then pour over the cooled cake.
