Lemon Sugar Cookies Recipe

Ingredients:

  • 2 ¼ cups (280g) all-purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 cup (227g) unsalted butter, softened

  • 1 ¼ cups (250g) granulated sugar (+ extra for rolling)

  • 1 large egg

  • 1 tbsp lemon zest (~2 lemons)

  • 2 tbsp fresh lemon juice

  • 1 tsp vanilla extract

Instructions:

  1. Whisk dry ingredients: In a bowl, mix flour, baking powder, and salt. Set aside.

  2. Cream butter & sugar: Beat softened butter and sugar until light and fluffy (2-3 mins).

  3. Add wet ingredients: Mix in egg, lemon zest, lemon juice, and vanilla.

  4. Combine: Gradually add dry ingredients to wet, mixing until just combined.

  5. Chill dough: Cover and refrigerate for 30-60 mins (helps prevent spreading).

  6. Preheat oven: 350°F (175°C). Line baking sheets with parchment paper.

  7. Shape cookies: Roll dough into 1.5-inch balls, then roll in extra sugar. Place 2 inches apart.

  8. Bake: 10-12 mins, until edges are lightly golden (centers will look soft).

  9. Cool: Let sit on baking sheet for 5 mins, then transfer to a wire rack.

Optional Enhancements:

  • Lemon glaze: Mix powdered sugar + lemon juice for drizzle.

  • Sandwich cookies: Fill with lemon curd or buttercream.
