Lemon Truffles Recipe

Ingredients:

  • 1 cup white chocolate chips (or chopped white chocolate)
  • 1/4 cup heavy cream
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers (or almond flour for a low-carb option)
  • Additional powdered sugar or crushed nuts for coating (optional)

Instructions:

1. Melt the Chocolate:

  • In a microwave-safe bowl, combine the white chocolate chips and heavy cream. Heat in the microwave in 30-second intervals, stirring after each interval until smooth and melted.

2. Add Flavor:

  • Stir in the lemon zest, lemon juice, and vanilla extract until well combined.

3. Chill the Mixture:

  • Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the mixture is firm enough to handle.

4. Form the Truffles:

  • Once the mixture is firm, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter).

5. Coat the Truffles:

  • Roll the truffles in crushed graham crackers, powdered sugar, or crushed nuts to coat.

6. Chill Again:

  • Place the coated truffles on a parchment-lined baking sheet and refrigerate for an additional 30 minutes to set.

7. Serve:
