Ingredients:

  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for coating)
  • Additional lemon zest for garnish (optional)

Instructions:

  1. Prepare Ingredients:
    • Gather all ingredients. Finely grate the lemon zest and squeeze the lemon juice.
  2. Melt Chocolate:
    • In a microwave-safe bowl, combine the white chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each interval until the chocolate is melted and smooth.
  3. Add Flavors:
    • Stir in the unsalted butter until melted and combined. Add the lemon zest, fresh lemon juice, and vanilla extract. Mix until well combined.
  4. Chill Mixture:
    • Cover the bowl with plastic wrap and refrigerate for about 1 hour, or until the mixture is firm enough to scoop.
  5. Form Truffles:
    • Using a small cookie scoop or spoon, scoop out small portions of the mixture and roll into balls between your palms. Place the truffles on a parchment-lined baking sheet.
  6. Coat Truffles:
    • Roll each truffle in powdered sugar until evenly coated. For an extra touch, garnish with additional lemon zest.
  7. Serve:
    • Store the truffles in an airtight container in the refrigerator. Let them sit at room temperature for a few minutes before serving to soften slightly.
