Limoncello Mascarpone Cake – A Citrus Delight! 🍋✨

Ingredients:

  • 1 cup mascarpone cheese
  • 1/2 cup limoncello liqueur
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons freshly grated lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • Powdered sugar for dusting (optional)
  • Lemon slices and mint leaves for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the Wet Ingredients:

    • In a large mixing bowl, whisk together the mascarpone cheese and granulated sugar until smooth and creamy.
    • Add the eggs one at a time, mixing well after each addition. Then stir in the limoncello liqueur, vanilla extract, and freshly grated lemon zest.
  3. Combine the Dry Ingredients:

    • In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
  4. Mix the Batter:

    • Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix.
    • In a separate small bowl, beat the heavy cream until it forms soft peaks. Gently fold the whipped cream into the batter until smooth and incorporated.
  5. Bake the Cake:

    • Pour the batter into the prepared cake pan and smooth the top with a spatula.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean, and the cake is golden on top.
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Finish and Serve:

    • Once the cake has cooled, dust it with powdered sugar if desired.
    • Garnish with lemon slices and mint leaves for a fresh and decorative touch.

This Limoncello Mascarpone Cake is perfect for any occasion, offering a creamy texture and a refreshing citrusy kick. It pairs beautifully with a cup of tea or a glass of limoncello. Enjoy your citrusy delight! 🍋🎂✨
