Loaded Steak Quesadillas Recipe

Ingredients

For the Steak:

  • 1 lb (450g) flank steak or sirloin, thinly sliced
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Juice of 1 lime

For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend (or cheddar and Monterey Jack)
  • 1/2 cup cooked corn kernels (optional)
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 small jalapeño, thinly sliced (optional)

Optional Toppings:

  • Sour cream
  • Guacamole
  • Salsa or pico de gallo
  • Hot sauce

Instructions

  1. Marinate the Steak:
    • In a bowl, mix olive oil, chili powder, cumin, garlic powder, smoked paprika, lime juice, salt, and pepper.
    • Add the thinly sliced steak and coat well. Let it marinate for at least 15 minutes (or up to 2 hours in the fridge).
  2. Cook the Steak:
    • Heat a skillet over medium-high heat. Once hot, add the steak slices and cook for 2–3 minutes per side until browned and cooked to your desired doneness. Remove from the skillet and set aside.
  3. Assemble the Quesadillas:
    • Lay a tortilla flat and sprinkle a generous layer of cheese over half of it.
    • Top with steak slices, corn, black beans, red onion, cilantro, and jalapeño slices if using. Add another layer of cheese on top.
    • Fold the tortilla in half to cover the filling.
  4. Cook the Quesadillas:
    • Heat a large skillet or griddle over medium heat. Lightly grease with butter or non-stick spray.
    • Place the folded quesadilla in the skillet and cook for 2–3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
  5. Serve:
    • Cut each quesadilla into wedges and serve hot with sour cream, guacamole, salsa, or hot sauce on the side.

Tips for Success

  • For extra flavor: Add sautéed bell peppers or caramelized onions to the filling.
  • Cheese melt factor: Use freshly shredded cheese for the best gooey texture.
  • Steak alternatives: Substitute with grilled chicken or sautéed veggies for variety.
