Low-Carb Zucchini with Mushrooms Recipe

Ingredients

  • 2 medium zucchinis, sliced into rounds or half-moons
  • 8 oz mushrooms, sliced (button or cremini work well)
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1/2 tsp dried oregano (or Italian seasoning)
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Vegetables:
    • In a large skillet, heat the olive oil or butter over medium heat.
    • Add the sliced mushrooms and cook for about 3-4 minutes, until they start to soften.
  2. Add Zucchini:
    • Add the sliced zucchini to the skillet and stir well. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
  3. Add Garlic and Seasonings:
    • Stir in the minced garlic, oregano, salt, and pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.
  4. Finish with Cheese (Optional):
    • If using, sprinkle the grated Parmesan cheese over the top and stir to combine. Cook for another minute until the cheese is melted.
  5. Serve:
    • Remove from heat and garnish with fresh parsley before serving.
