Mackinac Island Fudge

Ingredients

  • 3 cups (600g) granulated sugar
  • 1 cup (240ml) heavy cream
  • 1/2 cup (115g) unsalted butter
  • 1/4 tsp salt
  • 12 oz (340g) semi-sweet chocolate chips
  • 7 oz (200g) marshmallow creme (or 2 cups mini marshmallows)
  • 1 tsp vanilla extract
  • 1 cup (120g) chopped nuts (optional, such as walnuts or pecans)

Instructions

  1. Prepare the pan:
    • Line an 8×8-inch baking pan with parchment paper or aluminum foil, leaving some overhang for easy removal. Lightly grease the paper or foil.
  2. Cook the sugar mixture:
    • In a large saucepan, combine the sugar, heavy cream, butter, and salt. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.
    • Once boiling, stop stirring and let the mixture cook until it reaches the soft-ball stage (235°F/113°C on a candy thermometer). This should take about 5-7 minutes.
  3. Add the chocolate and marshmallow:
    • Remove the saucepan from the heat. Quickly stir in the chocolate chips, marshmallow creme (or mini marshmallows), and vanilla extract until the mixture is smooth and well combined.
    • If using nuts, fold them in at this stage.
  4. Pour and set:
    • Pour the fudge mixture into the prepared pan. Use a spatula to smooth the top.
    • Let the fudge cool at room temperature for 1-2 hours, then refrigerate until firm (about 2-3 hours).
  5. Cut and serve:
    • Once the fudge is set, lift it out of the pan using the parchment paper or foil overhang. Cut into small squares and serve.

  • Use a candy thermometer: This ensures the fudge reaches the correct temperature for the perfect texture.
  • Storage: Store the fudge in an airtight container at room temperature for up to 2 weeks or in the fridge for up to 3 weeks.
