Mandarin Lunch Box Salad 🍊🥗

Ingredients

Salad Base:

  • 2 cups chopped romaine or Napa cabbage

  • 1 (11 oz) can mandarin oranges, drained

  • 1 cup shredded red cabbage

  • 1 cup shredded carrots

  • ½ cup sliced cucumber

  • ¼ cup thinly sliced red onion

  • ¼ cup chopped cilantro or mint

  • ½ cup chow mein noodles or toasted almonds (for crunch)

  • ½ cup grilled chicken, shrimp, or tofu (optional, for protein)

Ginger-Sesame Dressing:

  • 3 tbsp rice vinegar

  • 1 tbsp soy sauce (or tamari for GF)

  • 1 tbsp honey (or maple syrup)

  • 1 tsp grated fresh ginger

  • 1 clove garlic, minced

  • 1 tbsp sesame oil

  • 1 tsp sriracha (optional, for heat)


Instructions

  • Combine romaine, red cabbage, carrots, cucumber, red onion, and cilantro in a large bowl.

2️⃣ Add Toppings:

3️⃣ Make Dressing:
