  • For the marinade:
    • 1/2 cup olive oil
    • 1/4 cup red wine vinegar or balsamic vinegar
    • 2 cloves garlic, minced
    • 1 tbsp fresh herbs (e.g., rosemary, thyme, or oregano), chopped
    • 1 tsp red pepper flakes (optional, for heat)
    • 1/2 tsp black pepper
    • 1/2 tsp salt
    • Zest of 1 lemon (optional, for brightness)
  • For serving:
    • Crackers, sliced baguette, or crusty bread
    • Fresh veggies (e.g., cherry tomatoes, cucumber slices, or bell pepper strips)
    • Olives or pickles (optional)

Instructions

  1. Prepare the cheese:
    • Cut the cheese into bite-sized cubes or slices. Arrange them in a shallow dish or on a serving platter.
  2. Make the marinade:
    • In a small bowl, whisk together the olive oil, vinegar, garlic, herbs, red pepper flakes (if using), black pepper, salt, and lemon zest (if using).
  3. Marinate the cheese:
    • Pour the marinade over the cheese, making sure all pieces are well coated. Cover and refrigerate for at least 1 hour, or up to 24 hours, to allow the flavors to meld.
  4. Serve:
    • Arrange the marinated cheese on a platter with crackers, bread, fresh veggies, and olives or pickles if desired.
    • Drizzle some of the marinade over the cheese for extra flavor.

Tips

  • Cheese selection: Use a mix of firm and semi-soft cheeses for variety in texture and flavor.
  • Add-ins: Include sun-dried tomatoes, artichoke hearts, or roasted garlic cloves in the marinade for extra flavor.
  • Presentation: Garnish with fresh herbs or a sprinkle of flaky sea salt for a beautiful finish.
