Marinated Cheese Plate

A stunning, flavor-packed appetizer with creamy cheese, herbs, and bold spices—perfect for entertaining or a gourmet snack!

Ingredients

For the Cheese:

  • 8 oz block of feta (or goat cheese, halloumi, or mozzarella), cut into cubes
  • 1 cup mixed olives (Kalamata, Castelvetrano, or green olives)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pepperoncini (optional, for a tangy kick)

For the Marinade:

  • 1/2 cup extra-virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tsp lemon zest
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt

For Serving:

  • Crusty bread or crackers
  • Sliced baguette or crostini
  • Fresh basil or oregano leaves (garnish)

Instructions

1️⃣ Prepare the Marinade:

  • In a small saucepan, gently heat olive oil, garlic, rosemary, thyme, red pepper flakes, lemon zest, black pepper, and salt over low heat for 3-4 minutes (do not let garlic brown). Let cool slightly.

2️⃣ Assemble the Cheese Plate:

  • In a shallow dish or jar, layer cheese cubes, olives, cherry tomatoes, and pepperoncini.
  • Pour the warm marinade over the cheese and veggies, ensuring everything is coated.

3️⃣ Marinate:

  • Cover and refrigerate for at least 2 hours (best overnight for deeper flavor).
  • Bring to room temperature 30 minutes before serving.

4️⃣ Serve:

  • Arrange on a platter with bread, crackers, and fresh herbs.
  • Drizzle with extra marinade for dipping.
