Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
  • For the Sauce:
    • 1 tablespoon butter
    • 3 cloves garlic, minced
    • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
    • 1 cup heavy cream
    • 1 cup chicken broth
    • 1 cup grated Parmesan cheese
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • 1 cup fresh spinach (optional)
    • Fresh basil for garnish (optional)

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  2. Sear the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
    • Add the sun-dried tomatoes and cook for another 2 minutes.
    • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  4. Add Cheese and Seasoning:
    • Stir in the Parmesan cheese, dried basil, and oregano. Cook until the sauce thickens slightly, about 3-5 minutes. If using, add the fresh spinach and cook until wilted.
  5. Combine:
    • Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for a couple of minutes to heat through.
  6. Serve:
    • Garnish with fresh basil if desired. Serve hot over pasta, rice, or with crusty bread.

Tips

  • You can use chicken thighs for a richer flavor.
  • Adjust the amount of sun-dried tomatoes and spinach to your taste.
