Mashed Potato Muffins Recipe

Ingredients

  • 2 cups leftover mashed potatoes
  • 1/2 cup milk (or as needed)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup green onions, chopped (or chives)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1/2 tsp baking powder
  • Cooking spray or muffin liners

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with muffin liners.
  2. Prepare the Mixture:
    • In a large mixing bowl, combine the leftover mashed potatoes with milk until you reach a smooth consistency. Adjust the milk amount as needed.
    • Stir in the eggs, Parmesan cheese, cheddar cheese, green onions, garlic powder, salt, pepper, and baking powder. Mix until well combined.
  3. Fill the Muffin Tins:
    • Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
  4. Bake:
    • Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  5. Cool and Serve:
    • Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack. Serve warm or at room temperature.
