Mini Meatloaf Muffins Recipe

Ingredients (Makes 12 muffins)

  • 1 lb ground beef (or a mix of beef and pork/turkey)
  • 1 small onion, finely chopped
  • 1 small carrot, grated
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/3 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup (plus extra for topping)
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning (or dried parsley/thyme)
  • Salt and pepper, to taste

For Topping

  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard (optional)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C). Lightly grease a standard muffin tin or line with cupcake liners for easy cleanup.
  2. Prepare the Meat Mixture:
    • In a large mixing bowl, combine breadcrumbs and milk. Let sit for 2 minutes to soften.
    • Add the ground meat, onion, carrot, egg, garlic, Worcestershire sauce, ketchup, mustard, Italian seasoning, salt, and pepper. Mix until just combined—don’t overmix to keep the muffins tender.
  3. Portion and Shape:
    • Divide the mixture evenly among the muffin cups, pressing gently to fill them.
  4. Prepare the Topping:
    • In a small bowl, mix ketchup, brown sugar, and mustard. Spread a spoonful of the topping over each meatloaf muffin.
  5. Bake:
    • Place the muffin tin in the oven and bake for 20–25 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
    • Let the muffins cool slightly in the pan before removing. Serve warm with mashed potatoes, a side salad, or your favorite veggies.

Tips:

  • Make-Ahead: These muffins freeze beautifully. Wrap them individually, and reheat as needed.
  • Customize: Swap in different vegetables (zucchini, bell pepper), cheeses, or even spices to suit your taste.
  • Healthier Option: Use lean ground turkey or chicken and reduce the ketchup topping for a lighter version.
