Mediterranean Cobb Salad
🌿 A fresh twist on the classic Cobb, packed with Greek flavors, creamy feta, and a zesty lemon-oregano dressing!
Ingredients
For the Salad:
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 English cucumber, diced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/2 cup Kalamata olives, pitted & halved
- 1/2 cup crumbled feta cheese
- 1/4 cup pepperoncini, sliced (optional)
- 1/2 lb grilled chicken, sliced (or chickpeas for vegan)
- 2 hard-boiled eggs, quartered
- 1/4 cup toasted pine nuts or slivered almonds
For the Lemon-Oregano Dressing:
- 1/4 cup extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dried oregano (or 1 tbsp fresh)
- 1/2 tsp honey
- Salt & pepper to taste
Instructions
1. Prepare the Dressing
- Whisk together all dressing ingredients in a small bowl. Set aside.
2. Assemble the Salad
- On a large platter or bowl, arrange romaine as the base.
- Neatly arrange rows of: tomatoes, cucumber, red onion, avocado, olives, feta, pepperoncini, chicken, and eggs.
- Sprinkle with toasted nuts.
3. Serve
- Drizzle with dressing just before serving.
- Toss lightly at the table for a dramatic presentation.
