Mediterranean Cobb Salad

🌿 A fresh twist on the classic Cobb, packed with Greek flavors, creamy feta, and a zesty lemon-oregano dressing!

Ingredients

For the Salad:

  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup Kalamata olives, pitted & halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pepperoncini, sliced (optional)
  • 1/2 lb grilled chicken, sliced (or chickpeas for vegan)
  • 2 hard-boiled eggs, quartered
  • 1/4 cup toasted pine nuts or slivered almonds

For the Lemon-Oregano Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1/2 tsp honey
  • Salt & pepper to taste

Instructions

1. Prepare the Dressing

  1. Whisk together all dressing ingredients in a small bowl. Set aside.

2. Assemble the Salad

  1. On a large platter or bowl, arrange romaine as the base.
  2. Neatly arrange rows of: tomatoes, cucumber, red onion, avocado, olives, feta, pepperoncini, chicken, and eggs.
  3. Sprinkle with toasted nuts.

3. Serve

  • Drizzle with dressing just before serving.
  • Toss lightly at the table for a dramatic presentation.

Tips & Variations

✔ Make ahead: Prep ingredients separately; assemble before serving.
✔ Vegan option: Skip eggs & chicken; add marinated artichokes & chickpeas.
✔ Extra protein: Add grilled shrimp or lamb meatballs.
