Here’s a simple and delicious One-Pot Pasta inspired by Meghan Markle’s go-to recipe (reportedly one of her favorites for a quick, fuss-free meal). It’s creamy, flavorful, and requires minimal cleanup—perfect for busy days!

Meghan Markle-Inspired One-Pot Pasta

Ingredients:

  • 12 oz (340g) linguine or spaghetti (or any long pasta)
  • 2 cups cherry tomatoes, halved
  • 1 small onion, thinly sliced
  • 3 garlic cloves, minced
  • ½ tsp red pepper flakes (optional, for heat)
  • 3 cups vegetable or chicken broth (low-sodium)
  • 1 cup water
  • 2 tbsp olive oil
  • 1 tsp salt, plus more to taste
  • ½ tsp black pepper
  • 2 cups baby spinach (or arugula)
  • ¼ cup heavy cream (or coconut milk for dairy-free)
  • ½ cup grated Parmesan (plus extra for serving)
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Combine Ingredients:
    • In a large pot or deep skillet, add uncooked pasta, tomatoes, onion, garlic, red pepper flakes, broth, water, olive oil, salt, and pepper. Stir gently to submerge the pasta.
  2. Cook:
    • Bring to a boil over high heat, then reduce to a simmer and cook for 10–12 minutes, stirring occasionally, until pasta is al dente and liquid reduces to a creamy sauce.
  3. Finish & Serve:
    • Stir in spinach, cream, and Parmesan until spinach wilts and cheese melts (~1–2 mins).
    • Taste and adjust seasoning. Garnish with fresh herbs and extra Parmesan.

Tips:

  • Add protein: Toss in cooked shrimp, chicken, or white beans.
  • Vegan? Skip the cream and Parmesan, or use nutritional yeast + coconut milk.
  • No broth? Water works, but add extra garlic, herbs, or a bouillon cube.
