Ingredients:

For the Beef Tips:

  • 1.5 lbs beef sirloin tips or stew meat (cut into 1-inch cubes)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional for extra flavor)
  • 1 tbsp butter (for sautéing)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

For the Mushroom Gravy:

  • 2 cups beef broth (low-sodium is best)
  • 1 cup heavy cream (or half-and-half)
  • 1 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1/2 tsp dried thyme (or fresh thyme if you have it)
  • 1 tsp Dijon mustard (optional, for a subtle tang)
  • 1 cup sliced mushrooms (button, cremini, or a mix)
  • 2 tbsp flour (for thickening)
  • 2 tbsp butter (for cooking the mushrooms)

Instructions:

  1. Prepare the Beef Tips:
    • Pat the beef tips dry with paper towels. This will help get a nice sear on them.
    • Season the beef tips with salt, pepper, garlic powder, onion powder, and smoked paprika (if using).
  2. Sear the Beef:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Once the oil is hot, add the beef tips in batches (to avoid overcrowding) and sear them on all sides until browned, about 3-4 minutes. Set the beef aside on a plate and cover to keep warm.
  3. Cook the Onions and Garlic:
    • In the same skillet, melt 1 tablespoon of butter over medium heat.
    • Add the chopped onions and cook for 3-4 minutes, stirring occasionally, until softened and caramelized.
    • Add the minced garlic and cook for another 30 seconds, until fragrant.
  4. Make the Mushroom Gravy:
    • Add the sliced mushrooms to the skillet with the onions and garlic. Cook, stirring occasionally, for about 5 minutes until the mushrooms are tender and browned.
    • Sprinkle the flour over the mushrooms and stir to coat. This will help thicken the gravy.
    • Gradually pour in the beef broth, whisking constantly to avoid lumps.
    • Stir in the heavy cream, Worcestershire sauce, soy sauce, thyme, and Dijon mustard (if using).
    • Bring the mixture to a simmer, allowing it to thicken for 5-7 minutes.
  5. Combine Beef with Gravy:
    • Once the gravy has thickened, return the seared beef tips to the skillet, along with any juices that have accumulated on the plate.
    • Stir everything together and reduce the heat to low. Let the beef simmer in the gravy for an additional 10-15 minutes, allowing the flavors to meld and the beef to become even more tender.
    • Taste and adjust seasoning with salt and pepper, if needed.
  6. Serve:
    • Serve the melt-in-your-mouth beef tips with the creamy mushroom gravy over mashed potatoes, rice, or pasta.
