Melt in Your Mouth Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (or your favorite herbs)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs (optional for extra crunch)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Prepare Chicken: Place the chicken breasts in the greased baking dish. If they are thick, you may want to pound them to an even thickness for more uniform cooking.
  3. Make the Coating: In a bowl, mix together the mayonnaise, Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper until well combined.
  4. Coat the Chicken: Spread the mayonnaise mixture over the chicken breasts, making sure they are evenly coated. If you like a crunchy topping, sprinkle breadcrumbs over the top of the coated chicken.
  5. Bake: Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The top should be golden and slightly crispy.
  6. Serve: Once done, let the chicken rest for a few minutes before slicing. Garnish with fresh parsley if desired.
