Ingredients:

  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (4 oz) diced green chilies (optional for heat)
  • 1 cup frozen corn kernels (optional, for added sweetness)
  • 1 can (14 oz) enchilada sauce (red or green, depending on preference)
  • 1 1/2 cups chicken broth (or beef broth, or water)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese (or a blend of Mexican cheeses)

  • Sour cream
  • Sliced green onions
  • Cilantro, chopped
  • Sliced jalapeños
  • Lime wedges

Instructions:

1. Brown the Ground Meat:

  • Preheat your oven to 350°F (175°C).
  • In a large skillet or pan, cook the ground beef (or turkey/chicken) over medium heat, breaking it apart with a spoon as it cooks. Season with a little salt and pepper. Cook until browned, about 5-7 minutes.

2. Prepare the Rice Mixture:
