🥥 Piña Colada Ice Cream Base

Ingredients:

  • 1 can (13.5 oz) full-fat coconut milk

  • ½ cup heavy cream

  • ½ cup crushed pineapple (drained well)

  • ⅓ cup cream of coconut (like Coco Lopez)

  • 1 tbsp coconut rum (or 1 tsp coconut extract for non-alcoholic)

  • Pinch of salt

Instructions:

  1. Blend all ingredients until smooth.

  2. Chill for at least 2 hours (or overnight).

  3. Churn in an ice cream maker according to manufacturer’s instructions.

  4. Transfer to a freezer-safe container and freeze while preparing the strawberry layer.


🍓 Strawberry Daiquiri Ice Cream Base

Ingredients:

  • 1½ cups fresh strawberries (hulled & chopped)

  • ¾ cup whole milk

  • ¾ cup heavy cream

  • ½ cup sugar

  • 2 tbsp light rum (or 1 tsp strawberry extract for non-alcoholic)

  • 1 tbsp lime juice

  • Pinch of salt

Instructions:

  1. Blend strawberries, milk, cream, sugar, rum, lime juice, and salt until smooth.

  2. Chill for at least 2 hours.

  3. Churn in an ice cream maker until thick and creamy.


🍨 Assembling Miami Vice Ice Cream

  1. Layer the two flavors in a loaf pan or container:

    • Alternate scoops of piña colada and strawberry daiquiri ice cream.

    • Use a knife to gently swirl (don’t overmix!).

  2. Freeze for 4+ hours until firm.

  3. Serve with a sprinkle of toasted coconut or fresh strawberry slices!
