  • ½ cup desiccated coconut, plus extra for rolling
  • 3 tablespoons milk powder
  • 2 tablespoons liquid milk

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Prepare the Dough:
    • In a large mixing bowl, cream together the softened butter and icing sugar until light and fluffy.
    • Add the self-raising flour, desiccated coconut, and milk powder. Mix until well combined.
    • Gradually add the liquid milk, mixing until a soft dough forms. Be careful not to overmix.
  3. Shape the Biscuits:
    • Take small portions of the dough (about 1 tablespoon each) and roll them into balls.
    • Roll each ball in the extra desiccated coconut to coat evenly.
    • Place the coated balls on the prepared baking sheet, spacing them about 2 inches apart. Gently press down on each ball to flatten slightly.
  4. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The biscuits will still be soft when you take them out but will firm up as they cool.
