Ingredients
For the Crust (Makes ~12 mini pies)

1 ¼ cups all-purpose flour

½ cup unsalted butter, cold & cubed

½ tsp salt

2 tbsp granulated sugar

3–4 tbsp ice-cold water
For the Sweet Potato Filling

1 cup mashed sweet potato (about 1 medium, baked or boiled)

¼ cup brown sugar (or maple syrup)

¼ cup heavy cream (or coconut milk for dairy-free)

1 egg
-
1 tsp vanilla extract
-
½ tsp cinnamon
-
¼ tsp nutmeg
-
¼ tsp ginger
-
⅛ tsp cloves
-
Pinch of salt

Instructions
1. Make the Crust

Mix dry ingredients: In a bowl, combine flour, salt, and sugar.

Cut in butter: Use a pastry cutter or fork to blend cold butter into the flour until it resembles coarse crumbs.

Add water: Sprinkle in ice water 1 tbsp at a time until dough just comes together.

Chill: Wrap in plastic and refrigerate for 30 minutes.
2. Prepare the Filling

Cook sweet potato: Bake (400°F for 45-60 mins) or boil until tender, then mash.

Mix filling: In a bowl, whisk mashed sweet potato, brown sugar, cream, egg, vanilla, and spices until smooth.
3. Assemble & Bake

Roll dough: On a floured surface, roll to ⅛-inch thickness.

Cut circles: Use a 3.5–4 inch round cutter (or a glass) to fit into a greased muffin tin.

Fill: Spoon filling into each crust (¾ full).

Bake: At 375°F for 20–25 mins until crust is golden and filling is set.
