Mint Chocolate Chip Snowball Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • ⅔ cup powdered sugar, sifted
  • 2 ¼ cups all-purpose flour (spooned and leveled)
  • ½ teaspoon salt
  • 1 teaspoon mint extract or peppermint extract
  • ½ cup mini chocolate chips (or regular chocolate chips, chopped)
  • Additional powdered sugar for rolling (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream the Butter and Powdered Sugar:

    • In a large bowl, cream the softened butter and sifted powdered sugar together using an electric mixer. Beat until the mixture is light and fluffy, about 2-3 minutes.
  3. Add the Flour, Salt, and Mint Extract:

    • Gradually add the flour and salt to the butter-sugar mixture, mixing until just combined.
    • Stir in the mint extract (or peppermint extract), which will give your cookies that refreshing minty flavor.
  4. Add the Chocolate Chips:

    • Gently fold in the mini chocolate chips (or chopped regular chocolate chips) until evenly distributed throughout the dough.
  5. Shape the Dough into Balls:

    • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spaced about 2 inches apart.
  6. Bake:

    • Bake the cookies for 12-15 minutes, or until the edges are lightly golden. The centers should still be soft, as they will firm up while cooling.
  7. Cool and Roll in Powdered Sugar (Optional):

    • Let the cookies cool on the baking sheet for about 5 minutes, then gently roll them in powdered sugar while they’re still warm to give them that classic snowball cookie look.
  8. Serve and Enjoy:

    • Once completely cooled, enjoy your minty, chocolatey snowball cookies!

Tips:

  • For an extra minty kick, you can add a few drops of green food coloring to the dough to make them festive for holidays like St. Patrick’s Day or Christmas.
  • These cookies store well in an airtight container and make great gifts!

These Mint Chocolate Chip Snowball Cookies are soft, buttery, and full of minty goodness with a touch of chocolate—perfect for any occasion. Enjoy! 🍪🍃🍫
