If you’re craving the ultimate comfort food with a New Orleans twist, this Cajun-Style Baked Mac and Cheese is rich, creamy, and packed with bold flavor. Inspired by the Big Easy’s love of spice and indulgence, this recipe features a three-cheese blend, a buttery breadcrumb topping, and a hint of Creole seasoning for that NOLA kick.

🧀 New Orleans Baked Mac and Cheese

*(Serves 8-10 | Prep: 20 mins | Cook: 30 mins | Total: 50 mins)*

📝 Ingredients:

For the Mac & Cheese:

  • 1 lb elbow macaroni (or cavatappi)

  • 4 tbsp butter

  • 1/4 cup all-purpose flour

  • 3 cups whole milk (warmed)

  • 1 cup heavy cream

  • 2 tsp Creole seasoning (like Tony Chachere’s)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper (optional, for heat)

  • 1/2 tsp black pepper

  • 3 cups shredded cheese (mix of sharp cheddar, Gruyère, and pepper Jack)

  • 1/2 cup grated Parmesan

For the Topping:

  • 1 cup panko breadcrumbs

  • 3 tbsp melted butter

  • 1/2 tsp Creole seasoning

  • 2 tbsp chopped parsley (optional)


👨‍🍳 Instructions:

1️⃣ Cook the Pasta

  • Boil macaroni in salted water until al dente (1-2 mins less than package instructions). Drain but do not rinse—you want the starch to help thicken the sauce.

2️⃣ Make the Cheese Sauce

  • In a large pot, melt butter over medium heat. Whisk in flour to form a roux (cook 1-2 mins until golden).

  • Slowly whisk in warm milk & cream until smooth. Simmer 3-4 mins until slightly thickened.

  • Stir in Creole seasoning, garlic powder, smoked paprika, cayenne, and black pepper.

  • Reduce heat to low, then gradually add shredded cheeses (reserve 1/2 cup cheddar for topping). Stir until melted and creamy.

3️⃣ Combine & Bake

  • Fold cooked pasta into the cheese sauce. Pour into a greased 9×13-inch baking dish.

  • Top with reserved cheddar and the buttery breadcrumb mixture (mix panko, melted butter, and Creole seasoning).

4️⃣ Bake & Broil

  • Bake at 375°F (190°C) for 20 mins, then broil 2-3 mins until golden and bubbly.

  • Garnish with parsley and extra Creole seasoning if desired.

✅ Make ahead: Assemble (without baking), refrigerate, then bake +10 mins when ready.
