No-Bake Chocolate Oat Bars

Ingredients

  • For the base and topping:
    • 1/2 cup (115g) unsalted butter
    • 1/2 cup (100g) brown sugar
    • 1 tsp vanilla extract
    • 2 cups (160g) rolled oats
    • 1 cup (90g) shredded coconut (optional)
  • For the chocolate filling:
    • 1 cup (175g) semi-sweet chocolate chips
    • 1/2 cup (120ml) sweetened condensed milk
    • 1 tbsp (15g) unsalted butter
    • 1/4 tsp salt

Instructions

  1. Prepare the base:
    • In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla extract until the sugar is dissolved.
    • Remove from heat and stir in the rolled oats and shredded coconut (if using). Mix until well combined.
  2. Press the base:
    • Line an 8×8-inch baking dish with parchment paper. Press half of the oat mixture firmly into the bottom of the dish to form an even layer.
  3. Make the chocolate filling:
    • In a small saucepan, combine the chocolate chips, sweetened condensed milk, butter, and salt. Heat over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth.
  4. Assemble the bars:
    • Pour the chocolate filling over the oat base, spreading it evenly.
    • Sprinkle the remaining oat mixture over the chocolate layer, pressing it down gently.
  5. Chill:
    • Refrigerate for at least 2 hours, or until the bars are firm.
  6. Cut and serve:
    • Lift the bars out of the dish using the parchment paper. Cut into squares and enjoy!

  • Add-ins: Mix in chopped nuts, dried fruit, or mini marshmallows for extra texture and flavor.
  • Storage: Store the bars in an airtight container in the fridge for up to 1 week.
