Here’s a simple and delicious No-Bake Pineapple Cream Dessert that’s perfect for any occasion! It’s refreshing, creamy, and super easy to make. This dessert combines pineapple, a creamy filling, and a crunchy crust without any need for baking.

No-Bake Pineapple Cream Dessert

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (about 10 graham crackers crushed)
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the filling:

  • 1 (8 oz) package cream cheese, softened
  • 1 (8 oz) container whipped topping (such as Cool Whip)
  • 1 cup powdered sugar
  • 1 can (20 oz) crushed pineapple, drained (reserve ¼ cup of juice)
  • 1 teaspoon vanilla extract

Instructions:

1. Prepare the crust:

  • In a medium bowl, combine the graham cracker crumbs and granulated sugar.
  • Add the melted butter and mix until everything is evenly combined. The mixture should resemble wet sand.
  • Press the mixture firmly into the bottom of a 9×9-inch or similar-sized baking dish to form a crust. Use the back of a spoon or the bottom of a glass to make it even.
  • Place the crust in the refrigerator for about 10-15 minutes to set while you prepare the filling.

2. Make the filling:

  • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.
  • Add the powdered sugar and vanilla extract, and continue to beat until smooth and creamy.
  • Fold in the whipped topping until fully combined.
  • Add the drained crushed pineapple (reserve ¼ cup of pineapple juice) to the mixture and stir gently to incorporate. If you’d like a more pineapple flavor, you can add a bit of the reserved juice.

3. Assemble the dessert:

  • Once the crust is chilled and firm, spread the pineapple cream mixture evenly over the crust.
  • Use a spatula to smooth out the top.
  • Refrigerate the dessert for at least 2 hours, or until fully set. You can even make it ahead of time and let it chill overnight!

4. Serve:

  • Once chilled and set, cut into squares and serve! Garnish with extra whipped topping or pineapple chunks if desired for an extra touch.

Tips for Success:

  • Pineapple: Be sure to drain the crushed pineapple thoroughly to avoid excess moisture in the filling. You can also use fresh pineapple if preferred.
  • Crust variation: If you want a different flavor for the crust, you can try using vanilla wafer cookies or shortbread cookies instead of graham crackers.
  • Topping options: Feel free to top with chopped nuts, shredded coconut, or even more fresh pineapple for added texture and flavor.
