This No-Bake Strawberry and Speculoos Pie is the perfect dessert for when you want something delicious but don’t feel like turning on the oven. The speculoos biscuits add a lovely spiced flavor, and the creamy mascarpone filling with fresh strawberries on top is irresistible. Here’s how to make it!

No-Bake Strawberry and Speculoos Pie

Ingredients:

  • 200g of speculoos biscuits
  • 100g of melted butter
  • 400g of strawberries, washed and rinsed
  • 250g of mascarpone
  • 100g of icing sugar
  • Zest of a lemon
  • 1 teaspoon of vanilla extract

Instructions:

1. Make the Crust:

  • Crush the speculoos biscuits into fine crumbs using a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
  • In a bowl, combine the crushed biscuits with the melted butter. Mix until the crumbs are evenly coated.
  • Press the mixture into the base of a pie dish (or a tart pan) to form the crust. Use the back of a spoon to pack it tightly and evenly. Place the crust in the fridge for at least 30 minutes to set.

2. Prepare the Mascarpone Filling:

  • In a large bowl, combine the mascarpone, icing sugar, lemon zest, and vanilla extract. Whisk until smooth and creamy.
  • Taste and adjust sweetness if necessary by adding more icing sugar if desired.

3. Assemble the Pie:

  • Once the crust is set, spread the mascarpone mixture evenly over the speculoos crust, smoothing the top with a spatula.

4. Top with Strawberries:

  • Slice the strawberries and arrange them on top of the mascarpone filling. You can either layer them or arrange them decoratively.

5. Chill the Pie:

  • Refrigerate the pie for at least 3 hours, or ideally overnight, to allow the flavors to meld together and the pie to firm up.

6. Serve:

  • Before serving, you can optionally garnish with a little extra lemon zest or some crushed speculoos biscuits for an extra crunch.
  • Slice and enjoy this refreshing and creamy no-bake dessert!
