Instructions:

  1. Prepare Pan: Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal. Set aside.
  2. Melt Butter: In a large saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla extract until the sugar is dissolved.
  3. Add Oats and Salt: Add the rolled oats and salt to the saucepan. Cook, stirring constantly, for 4-5 minutes until the oats are well-coated and slightly toasted.
  4. Layer Oats: Press half of the oat mixture firmly into the prepared baking pan, creating an even layer.
  5. Melt Chocolate and Peanut Butter: In a microwave-safe bowl, combine the chocolate chips and peanut butter (if using). Microwave in 30-second intervals, stirring after each interval, until the mixture is smooth and melted.
  6. Layer Chocolate: Pour the melted chocolate mixture over the oat layer in the baking pan, spreading it evenly.
  7. Add Remaining Oats: Press the remaining oat mixture over the chocolate layer, pressing down firmly to create an even top layer.
  8. Chill: Refrigerate the bars for at least 2 hours, or until they are firm and set.
  9. Serve: Once the bars are set, use the parchment paper overhang to lift them out of the pan. Cut into squares and serve.
