Oladyi (Russian Yogurt Pancakes)

Fluffy, golden, and slightly tangy—these quick yogurt pancakes are a beloved Eastern European breakfast!

📝 Ingredients

  • 175g (1⅓ cups) 00 flour (or all-purpose/GF blend)

  • 5 tbsp yogurt (plain, Greek, or dairy-free)

  • 2 tbsp sugar

  • 2 tbsp vegetable oil (plus extra for frying)

  • 1 large egg

  • 2 tsp baking powder

  • 1 vanilla sugar sachet (or 1 tsp vanilla extract)

  • Pinch of salt

  • Optional:

    • ½ tsp cinnamon or lemon zest

    • Jam, honey, or sour cream for serving

1. Make the Batter:

  1. In a bowl, whisk egg, yogurt, sugar, oil, and vanilla.

  2. Sift in flour, baking powder, and salt. Stir until just combined (small lumps are okay).
