Old Fashioned Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk (or milk with 1 tbsp lemon juice or vinegar added)
  • 1 large egg
  • 2 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract (if using). Mix until well combined.
  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; some lumps are okay. Be careful not to overmix.
  4. Heat the Griddle: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
  5. Cook the Pancakes: Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, or until golden brown.
  6. Serve: Serve warm with maple syrup, fresh fruit, or your favorite toppings.

Tips

  • For fluffier pancakes, let the batter rest for about 5-10 minutes before cooking.
  • You can add chocolate chips, blueberries, or nuts to the batter for extra flavor.
