Here’s a recipe for Old-Fashioned Potato Candy! This sweet treat is a fun and nostalgic candy that has a surprisingly delicious flavor, combining mashed potatoes with powdered sugar and peanut butter.

Ingredients:

  • 1 medium-sized potato (about 1/2 cup mashed)
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup smooth peanut butter
  • 1/2 cup coconut (optional, for rolling)

Instructions:

1. Cook the Potato:

  • Boil the potato until it’s soft and easily pierced with a fork. You can peel it if you’d like, but it’s not necessary.
  • Once cooked, mash the potato thoroughly, making sure there are no lumps. You only need about 1/2 cup of mashed potato for this recipe.

2. Prepare the Candy Mixture:

  • In a large bowl, combine the mashed potato and powdered sugar, a little at a time, mixing until a dough-like consistency forms.
  • Add the vanilla extract and continue mixing.
  • Gradually fold in the peanut butter until fully incorporated into the mixture. This should form a thick, pliable dough.

3. Shape the Candy:

  • Roll the mixture into small balls, about 1 inch in diameter. You can also roll the mixture into a log shape and then slice it into pieces if you prefer.

4. Coat (Optional):

  • If desired, roll the balls in shredded coconut for a little extra texture and flavor. This step is optional but adds a nice touch!

5. Chill:

  • Place the potato candy balls on a parchment-lined tray and refrigerate for at least 1 hour to firm up.

6. Serve:

  • Once chilled, your Old-Fashioned Potato Candy is ready to serve! Enjoy these sweet, creamy treats as a nostalgic snack or a homemade candy gift.
