Olive Garden Rosemary Garlic Chicken Copycat Recipe

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 4 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon onion powder (optional)
  • 1 teaspoon dried thyme (optional)

For the Sauce:

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1/2 teaspoon lemon zest (optional for extra brightness)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt, pepper, rosemary, and any optional seasonings (onion powder and thyme).
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts to the skillet and cook for 5-7 minutes on each side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside to keep warm.

2. Make the Rosemary Garlic Sauce:

  • In the same skillet, melt 2 tablespoons of butter and add 2 tablespoons of olive oil over medium heat.
  • Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant but not burnt.
  • Pour in the chicken broth and bring it to a simmer. Let it cook for 2-3 minutes, reducing slightly.
  • Add the heavy cream and rosemary, stirring to combine. Let the sauce simmer for another 3-4 minutes, until it thickens slightly. If desired, add the lemon zest to brighten up the sauce.
  • Season the sauce with salt and pepper to taste.

3. Combine Chicken with Sauce:

  • Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Let the chicken simmer in the sauce for another 2-3 minutes, ensuring it is heated through and coated with the creamy rosemary garlic sauce.

4. Serve:

  • Transfer the chicken breasts to serving plates and drizzle with the rosemary garlic sauce.
  • Garnish with chopped fresh parsley for a pop of color and extra flavor.
  • Serve the chicken with your choice of side dishes, such as mashed potatoes, pasta, or steamed vegetables.

Tips:

  • For extra flavor: Marinate the chicken in a little olive oil, garlic, rosemary, and lemon juice for 30 minutes before cooking.
  • Make it gluten-free: This recipe is naturally gluten-free, but be sure to check your chicken broth and cream for any additives that contain gluten.
  • Thickening the sauce: If the sauce is too thin, you can add a little more heavy cream or simmer it longer until it reaches your desired consistency.
