One-Pan Chicken with Buttered Noodles is a comforting, easy-to-make meal perfect for busy weeknights. Juicy, seared chicken pairs beautifully with buttery, herb-infused noodles, all cooked in one pan for minimal cleanup.

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 8 oz egg noodles (or another quick-cooking pasta)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Directions:

  1. Season the chicken:
    • Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and paprika.
  2. Sear the chicken:
    • Heat the olive oil and 1 tablespoon of butter in a large, deep skillet or sauté pan over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the pan and set aside.
  3. Sauté the garlic:
    • Reduce the heat to medium and add the remaining 2 tablespoons of butter to the pan. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Cook the noodles:
    • Add the chicken broth to the pan and bring to a boil. Stir in the egg noodles, ensuring they are mostly submerged in the liquid. Reduce the heat to medium-low, cover, and cook for 6-8 minutes, stirring occasionally, until the noodles are tender and have absorbed most of the liquid.
  5. Add Parmesan and combine:
    • Once the noodles are cooked, stir in the grated Parmesan cheese until it melts into the sauce. Season with additional salt and pepper if needed.
  6. Return the chicken to the pan:
    • Place the cooked chicken breasts on top of the noodles. Cover and let everything warm together for 2-3 minutes.
  7. Serve:
    • Garnish with chopped fresh parsley if desired. Serve the chicken alongside the buttery noodles for a simple, hearty meal.
