One-Pan Sausage, Green Beans & Potatoes

📝 Ingredients

1 lb (450g) smoked sausage (kielbasa, andouille, or chicken sausage), sliced into coins

1 lb (450g) baby potatoes, halved (or quartered if large)

12 oz (340g) fresh green beans, trimmed

3 tbsp olive oil

4 garlic cloves, minced

1 tsp paprika

1 tsp dried thyme (or 1 tbsp fresh)

½ tsp onion powder

Salt & black pepper to taste

¼ tsp red pepper flakes (optional, for heat)

Prep: Preheat oven to 400°F (200°C). Line a sheet pan with foil or parchment.

Season veggies: In a large bowl, toss potatoes with 2 tbsp olive oil, garlic, paprika, thyme, onion powder, salt, and pepper.

Roast potatoes: Spread potatoes on the pan. Roast 20 mins, stirring halfway.

Add sausage & green beans: Toss green beans and sausage with remaining 1 tbsp oil and red pepper flakes. Add to the pan.

Finish roasting: Cook 15–20 mins more until potatoes are golden and green beans are slightly charred.
