One-Pan Sausage, Green Beans & Potatoes

Juicy sausage, tender potatoes, and crisp-tender green beans roasted together with garlic and herbs—a complete, fuss-free meal on one sheet pan!


📝 Ingredients

  • 1 lb (450g) smoked sausage (kielbasa, andouille, or chicken sausage), sliced into coins

  • 1 lb (450g) baby potatoes, halved (or quartered if large)

  • 12 oz (340g) fresh green beans, trimmed

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • ½ tsp onion powder

  • Salt & black pepper to taste

  • ¼ tsp red pepper flakes (optional, for heat)


👩‍🍳 Instructions

  1. Prep: Preheat oven to 400°F (200°C). Line a sheet pan with foil or parchment.

  2. Season veggies: In a large bowl, toss potatoes with 2 tbsp olive oil, garlic, paprika, thyme, onion powder, salt, and pepper.

  3. Roast potatoes: Spread potatoes on the pan. Roast 20 mins, stirring halfway.

  4. Add sausage & green beans: Toss green beans and sausage with remaining 1 tbsp oil and red pepper flakes. Add to the pan.

  5. Finish roasting: Cook 15–20 mins more until potatoes are golden and green beans are slightly charred.


💡 Pro Tips

  • Extra crispy: Broil 2–3 mins at the end.

  • Swap it: Use sweet potatoes or Brussels sprouts instead of green beans.

  • Meal prep: Stores well in the fridge for 3–4 days—reheat in a skillet!
