🧀 Ingredients (Serves 4-6)

  • 1 lb (450g) pasta (penne, rotini, or shells)
  • 2 cups (480ml) whole milk
  • 1 cup (120g) shredded white cheddar cheese
  • 1 cup (120g) shredded mozzarella cheese
  • ¼ cup (60g) butter
  • 2 garlic cloves, minced (optional)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional, for depth)
  • ¼ cup (25g) grated Parmesan (for topping, optional)

🍝 Instructions

1. Cook the Pasta

  1. In a large skillet or pot, combine pasta, milk, butter, garlic (if using), salt, and pepper.
  2. Bring to a gentle boil over medium heat, stirring frequently to prevent sticking.
  3. Reduce heat to low, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente and milk is mostly absorbed.

2. Add the Cheese

  1. Remove from heat. Stir in cheddar and mozzarella until melted and creamy.
  2. For extra richness, mix in nutmeg or a splash of reserved pasta water if needed.
