One Pot Chicken Parmesan Pasta

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 12 oz (340g) penne or rotini pasta
  • 1 can (14 oz) crushed tomatoes
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions:

  1. Cook the Chicken:
    • In a large pot or skillet, heat the olive oil over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Sauté Garlic:
    • In the same pot, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds, or until fragrant.
  3. Add Liquids and Pasta:
    • Pour in the chicken broth and crushed tomatoes. Stir well to combine. Bring the mixture to a simmer.
  4. Cook the Pasta:
    • Add the pasta to the pot, stirring to ensure it is submerged in the liquid. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  5. Combine and Add Cheese:
    • Once the pasta is cooked, return the cooked chicken to the pot. Stir in the grated Parmesan cheese and half of the mozzarella cheese until everything is well combined and the cheese is melted.
  6. Finish with Mozzarella:
    • Sprinkle the remaining mozzarella cheese on top. Cover the pot for a couple of minutes to let the cheese melt.
  7. Garnish and Serve:
    • Remove from heat and garnish with fresh basil or parsley. Serve hot and enjoy your delicious one pot chicken Parmesan pasta!

Tips:

  • Vegetable Additions: You can add vegetables like spinach or bell peppers for extra nutrition.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
