📝 Ingredients
- 1 lb (450g) ground beef (or ground turkey)
- 8 oz (225g) egg noodles
- 8 oz (225g) mushrooms, sliced
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 cups (480ml) beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ cup (120ml) sour cream (or Greek yogurt)
- 2 tbsp chopped fresh parsley (for garnish)
- 2 tbsp olive oil

1. Brown the Beef
- Heat olive oil in a large pot/Dutch oven over medium-high heat.
- Add ground beef and cook until browned (5-6 mins). Drain excess fat if needed.
2. Sauté Veggies
- Add onion, mushrooms, and garlic. Cook until softened (4-5 mins).
3. Simmer the Sauce
- Stir in beef broth, Worcestershire, Dijon, paprika, salt, and pepper.
- Add egg noodles, submerging them in the liquid.
- Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 mins (stirring occasionally) until noodles are tender.
4. Finish with Cream
- Remove from heat, stir in sour cream until creamy.
- Garnish with parsley and serve hot!
