🍝 One-Pot Savory Ground Beef Stroganoff

Creamy, rich, and ready in 30 minutes! Tender ground beef, mushrooms, and egg noodles smothered in a velvety sour cream sauce—all made in one pot for easy cleanup.


📝 Ingredients

  • 1 lb (450g) ground beef (or ground turkey)
  • 8 oz (225g) egg noodles
  • 8 oz (225g) mushrooms, sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups (480ml) beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup (120ml) sour cream (or Greek yogurt)
  • 2 tbsp chopped fresh parsley (for garnish)
  • 2 tbsp olive oil

👩🍳 Instructions

1. Brown the Beef

  • Heat olive oil in a large pot/Dutch oven over medium-high heat.
  • Add ground beef and cook until browned (5-6 mins). Drain excess fat if needed.

2. Sauté Veggies

  • Add onion, mushrooms, and garlic. Cook until softened (4-5 mins).

3. Simmer the Sauce

  • Stir in beef broth, Worcestershire, Dijon, paprika, salt, and pepper.
  • Add egg noodles, submerging them in the liquid.
  • Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 mins (stirring occasionally) until noodles are tender.

4. Finish with Cream

  • Remove from heat, stir in sour cream until creamy.
  • Garnish with parsley and serve hot!

✔ Extra creamy? Add ¼ cup cream cheese with the sour cream.
✔ No egg noodles? Use any short pasta (adjust cooking time).
✔ Vegetarian? Swap beef for lentils or mushrooms.
