One-Pot Spinach Orzo with Parmesan Recipe

Ingredients:

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional, for a little heat)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the aromatics:
    • Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and sauté for 3-4 minutes, until softened. Add the minced garlic and cook for another minute until fragrant.
  2. Toast the orzo:
    • Add the orzo pasta to the pot and stir to coat it in the oil. Toast for 1-2 minutes, stirring frequently, until the orzo is lightly golden.
  3. Add the broth:
    • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer, stirring occasionally, for 8-10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  4. Add the spinach:
    • Stir in the chopped spinach and cook for 1-2 minutes, until wilted.
  5. Finish with Parmesan:
    • Remove the pot from the heat and stir in the grated Parmesan cheese. Season with red pepper flakes (if using), salt, and pepper to taste.
  6. Serve:
    • Garnish with chopped fresh parsley and serve warm.
