Ingredients:

  • 2 large onions, thinly sliced
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup buttermilk
  • 1 large egg
  • Vegetable oil, for frying

Instructions:

  1. Preparation:
    • In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, garlic powder, and paprika.
  2. Mixing the Batter:
    • In a separate bowl, whisk together the buttermilk and egg.
    • Pour the buttermilk mixture into the dry ingredients and stir until well combined.
    • Add the sliced onions to the batter and mix until the onions are evenly coated.
  3. Frying:
    • Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
    • Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of a spoon.
    • Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
  4. Draining:
    • Remove the fritters from the skillet and drain on paper towels to remove excess oil.
  5. Serving:
    • Serve the onion fritters hot, with your favorite dipping sauce.
