Ingredients:
- 2 large onions, thinly sliced
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup buttermilk
- 1 large egg
- Vegetable oil, for frying
Instructions:
- Preparation:
- In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, garlic powder, and paprika.
- Mixing the Batter:
- In a separate bowl, whisk together the buttermilk and egg.
- Pour the buttermilk mixture into the dry ingredients and stir until well combined.
- Add the sliced onions to the batter and mix until the onions are evenly coated.
- Frying:
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of a spoon.
- Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
- Draining:
- Remove the fritters from the skillet and drain on paper towels to remove excess oil.
- Serving:
- Serve the onion fritters hot, with your favorite dipping sauce.
