🍳 Oven-Baked Spinach and Feta Breakfast Casserole

Fluffy eggs, creamy feta, and savory spinach baked into a hearty, make-ahead breakfast perfect for a crowd or meal prep!


📝 Ingredients

Base:

  • 8 large eggs

  • 1 cup milk (or half-and-half for richness)

  • 1 cup cottage cheese or plain Greek yogurt (for protein and moisture)

  • 1 tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp nutmeg (optional, but delicious with spinach!)

Fillings:

  • 10 oz fresh spinach, roughly chopped (or 1 box frozen spinach, thawed and squeezed dry)

  • 1 cup crumbled feta cheese

  • 1 onion, finely diced

  • 1 cup mushrooms, sliced (optional)

  • ½ cup sun-dried tomatoes or roasted red peppers, chopped (optional)

Topping:

  • ½ cup shredded mozzarella or cheddar

  • 2 tbsp grated Parmesan

  • Fresh dill or parsley for garnish


👩‍🍳 Instructions

1. Prep the Ingredients

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. If using fresh spinach, wilt it in a skillet with a splash of water. Drain excess liquid.

  3. Sauté onion (and mushrooms if using) until soft. Let cool slightly.

2. Make the Egg Mixture

  1. In a large bowl, whisk eggs, milk, cottage cheese, garlic powder, salt, pepper, and nutmeg until smooth.

3. Assemble the Casserole

  1. Spread spinach, sautéed veggies, feta, and sun-dried tomatoes evenly in the baking dish.

  2. Pour the egg mixture over the top. Gently shake the dish to distribute.

  3. Sprinkle with mozzarella and Parmesan.

4. Bake

  • Bake for 35–45 minutes, until the center is set and the top is golden brown.

  • Let rest for 10 minutes before slicing.
