Oven-Fried Stuffed Potatoes

Ingredients:

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ¼ cup cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste
  • ¼ tsp paprika (optional, for garnish)

Instructions:

  1. Prepare the potatoes:
    • Preheat your oven to 400°F (200°C).
    • Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork to allow steam to escape during baking.
    • Rub the potatoes with olive oil and sprinkle lightly with salt.
  2. Bake the potatoes:
    • Place the potatoes directly on the middle oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  3. Prepare the filling:
    • Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise.
    • Carefully scoop out the insides of the potatoes, leaving a thin layer of potato flesh attached to the skin to keep it sturdy.
    • Place the scooped-out potato flesh in a bowl and mash it with a fork or potato masher.
  4. Mix the filling:
    • Add the sour cream, shredded cheddar cheese, crumbled bacon, and chopped green onions to the mashed potato. Season with salt and pepper to taste. Mix until well combined.
  5. Stuff the potatoes:
    • Spoon the filling mixture back into the potato skins, dividing it evenly among them. Sprinkle the tops with a little extra shredded cheese and a pinch of paprika (if using).
  6. Broil the potatoes:
    • Turn the oven to broil. Place the stuffed potatoes on a baking sheet and broil for 3-5 minutes, or until the cheese is melted and bubbly, and the tops are golden brown. Watch closely to prevent burning.
  7. Serve:
    • Garnish with additional chopped green onions or bacon crumbles if desired. Serve warm as a main dish or side.

Tips:

  • For a lighter version, substitute Greek yogurt for sour cream.
  • Add other toppings like sautéed mushrooms, jalapeños, or diced ham for extra flavor.
  • If you’re short on time, you can microwave the potatoes instead of baking them. Just prick them with a fork, microwave for 8-10 minutes (flipping halfway through), and then finish in the oven for crispiness.
